Where have the days gone? Fall is definitely here - I love this time of year. Cool weather, not quite cold enough for a jacket but still a little nip in the air every now and again. Refreshing.
They've tarred the roads - it only took them a whole year - but it's done! I felt like doing cartwheels down our road, but then I reconsidered.
I spent the most of the weekend either baking, or outside enjoying the weather, reading. A friend had asked me to bake a cake for her daughter's 18th birthday today. Since it better to ice cakes a day after baking I started the baking process on Sunday. Iced them yesterday and put it all together. White butter-cream with fondant accents. Three tiers, really cute with lime green, dark brown and blue dots and wavy lines. I even made a fondant bow for the top! I'm still battling to sleep at night and last night woke up at 3am. After trying to get back to sleep for an hour, (the ambient noise coming from the other side of the bed did not help!) I decided to get up and go read downstairs. Lucky I did - there was a cake-tastorophy in the kitchen! My middle tier cake had obviously cracked and was lurching precariously to one side, my bow had wilted intto some brown stringy blob and it was altogether looking pretty sad! Cake emergency! Check eggs, got; check sour cream, got; leftover filling, got. Got cake mixed and into the oven and proceeded to de-construct existing cake. Took it down to the first layer and added a new layer once it was baked and cooled. Had enough frosting leftover (thank Heavens!) to re-ice it all. Also had some leftover fondant dots leftover so used them. Used the sprays of dots as well, and whah-lah - done! By 7 O'clock cake number two was done and ready for delivery, dishes were in the washer and I had finished my 5th cup of coffee for the day already! And, Rory and the kids had breakfast - cake!
Fiona came to pick it up a few minutes ago and was thrilled with it, so I can now breathe a huge sigh of relief. No more coffee though - I've got a headache and the jitters already!
